How is precise tech quenching Aussies' dairy needs?

Precision fermentation is growing in favour among health and eco-conscious buyers. With the dairy industry facing major setbacks in Australia due to ethical and environmental concerns, brands are jumping on the shift to animal-free dairy. But will they be able to convince local consumers?

Dr. Jared Raynes

Dr Jared Raynes, Chief Scientific Officer of All G Foods, is the first person in the world to assemble casein micelles using precision fermented casein proteins. He holds a PhD in Molecular Biology and Biochemistry from the University of Canterbury and is an Adjunct Research Fellow at the University of Sydney.

Laura Navone

Dr Laura Navone is a Synthetic Biologist with expertise in the areas of protein production and industrial biotechnology. Navone has focused her last eight years of research on understanding protein folding and secretion pathways in yeast, developing a molecular toolbox to overcome bottlenecks in protein production for precision fermentation technologies. Her research and development have provided outputs for the industrial manufacturing of proteins for Australian industries. In the last 12 months, she has led the development of recombinant milk protein production strains at Eden Brew.

Milena Bojovic

Milena Bojovic is a PhD candidate in geography and planning at the School of Social Sciences at Macquarie University, Sydney. Her research interests are broadly related to environmental and social sustainability issues within food systems, particularly the intersections of climate change, animal agriculture, and the development and diffusion of alternative proteins. Her research examines just transitions for the dairy sector in Aotearoa, New Zealand, and considers the justice implications for humans, non-humans, and environments.

Sarah Wei

Sarah Wei is a journalist and producer based in Melbourne and Hong Kong, with a focus on the travel, lifestyle, and arts and culture sectors. She has produced over 35 talks and workshops with 120 speakers, three large-scale 5-day events, over 20 community events,  one VR/AR exhibition, and more than 150 published features and stories across the region.
