Plant-based milk is far from a 21st-century invention – medieval Christian Europeans drank almond milk, and mentions of soy milk began to appear in Chinese texts as early as 1365 – and yet the dairy aisle in the typical American grocery store is increasingly featuring an abundance of alt-milk options.
