Despite the staggering 2010 statistic released by the NRDC that food waste in the US amounts to 30% – 40% of the food supply, the food waste in America’s supply chain remains virtually invisible. [1] Both the unfinished sandwich on the plate and the too- bruised peach end up in a landfill – even if they make it onto the shelves.
