Each year, almost half of the world's food is thrown away – equivalent to some two billion tonnes. [1] In the UK alone, an estimated 8.3 million tonnes of food and drink were wasted in 2010, 5.3 million tonnes of which was avoidable. [2]

Traditionally the preserve of self-professed 'dumpster divers', 'skippers' and 'freegans', this wasted food is now being put to wider social and commercial use by Rubies in the Rubble, a London-based culinary start-up that makes gourmet chutneys from surplus fruit and veg.
